Salad for Breakfast

I am sitting her… 10:35am as I write this, on a Sunday morning, and having salad for breakfast. A combination of romaine and butter lettuce (butter lettuce is my favorite but I don’t usually get it because it’s so expensive!).

I’ve been reading more of Eat To Live again… well, rereading the bits that I thought I needed to refresh my memory on. And all over again I remember why I became vegetarian in the first place. I read Diet for a New America about 17 years ago, by John Robbins, and that turned me to vegetarianism overnight. My Mom said I looked pale for weeks as my body adjusted. But I could no longer bear to eat meat and contribute to the awful suffering animals go through before they are killed.

Eat to Live doesn’t talk much about the welfare of the animals, but I don’t need to read about that anymore.  Now I’m reading because of my health.  I read Eat To Live first a couple of years ago, and I don’t even remember why I bought it.  But I beleive what he says. And I want to live a long and healthy life, and so I’m going back to it. And I’ll keep the book close by me to refresh my memory. I forget… I have a rotten memory. The good thing about that is when I read something over again, it’s like reading it anew.  :)

And instead of looking up Delsey luggage on the internet for Christmas presents, I’m considering buying a copy or two of Eat To Live. However, I don’t want my friends and family to think I’m pushing anything on them. I just want to give them another way of looking at the foods we eat. And I know I know… I’m a sucker and I can believe just about anything I read or hear (keep me away from infomercials please!) but in this case, I’m sure it’s the best way to go. One of the lines struck me from the book just now… Dr. Furhman says:

Leafy Greens, the most nutrient rich foods on the planet, were the best predictor of extreme longevity.

He is talking, on page 76, about studies that show how long people live by what they eat.  I’d forgotten how good leafy greens are for us humans.  And that, my readers, is why I’m having salad for breakfast today. And I have some green beans in the microwave defrosting, too, to add to my salad later on.

And yeah… eating more veggies and fruits does make me feel a whole lot better physically and mentally, too.  So back to eating veggies, yum!

    I am a vegan and I am happy being one. I can testify on all the good effects of fruits and vegetable in our body. Eating them is like having an internal body cleansing. And yes they are sure yummy.

      Hi Lady63 thanks for your visit! I agree, eating fruits and veggies just feels SO good. It is like my body is being cleansed… plus, my skin clears up, my nails grow stronger, and I just feel better.

    I had never heard that stat before, thanks! I haven’t been having as many leafy greens in my diet just cuz with dietary needs they’re a little high maintenance for me, but now I totally will :) Maybe it’ll have some payback later on in life! Sounds like it :)
